Sauce (Salsa Ranchera)

    Prepare and roast

    If using fresh tomatoes: halve the tomatoes and place cut-side down on a hot skillet or under a broiler until skins char and flesh softens (6–8 minutes). If using canned tomatoes: pulse briefly in a blender or chop roughly.

    Sauté aromatics

    Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the chopped onion and cook, stirring, until translucent, about 3–4 minutes. Add the garlic and chopped serrano/jalapeño and cook 30–60 seconds until fragrant but not browned.

    Combine and simmer

    Add the roasted/chopped tomatoes to the skillet with the onion mixture. Stir in ground cumin and 3/4 teaspoon kosher salt and simmer gently for 6–8 minutes so flavors meld and sauce slightly thickens.

    Finish the salsa

    Remove skillet from heat and stir in chopped cilantro and 1/2 tablespoon lime juice. Taste and adjust seasoning with remaining salt and 1/4 teaspoon black pepper as needed. Keep warm on very low heat or transfer to a small saucepan to hold warm while preparing eggs.

    Warm and lightly fry tortillas

    Heat a separate large skillet or comal over medium heat. Brush each corn tortilla lightly with melted butter (or press in butter) and warm 30–45 seconds per side until pliable and slightly crisp on edges. Stack and keep covered with a clean towel to stay warm. Alternatively, crisp tortillas lightly in a dry skillet for a few seconds per side if you prefer crunch.

    Fry eggs

    In a nonstick skillet, heat 1 tablespoon oil over medium-high until shimmering. Crack two eggs into the skillet, spacing apart. Reduce heat to medium. For sunny-side-up: cook until whites are set but yolks still runny, about 3–4 minutes; cover for last minute if whites need to set. For over-easy: cook 2–3 minutes then gently flip and cook 20–30 seconds. Season eggs with 1/4 teaspoon kosher salt while cooking.

    Assemble

    Place three warm tortillas on plates (two tortillas under one egg, one under the other, or two stacked under each egg as preferred). Lay the fried eggs on top of the tortillas. Spoon 1/3 to 1/2 cup warm ranchera sauce over each egg, allowing some to run onto the tortillas so they soak up the sauce.

Garnishes & Serve

    Scatter 1 tablespoon crumbled queso fresco over the sauced eggs. Add sliced radishes, avocado slices, and extra cilantro leaves. Drizzle 1 teaspoon sour cream or crema in a thin line or dollop beside the eggs. Serve immediately with hot sauce at the table.

    Notes: To make this a heartier meal, serve with refried beans or charred potatoes on the side. Salsa can be made up to 24 hours ahead and warmed gently before serving.
