Flautas Mexicanas Recipe

Prepare filling
Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Stir in the shredded cooked chicken or pork, cumin, chili powder, salt and pepper. Cook, stirring, until meat is heated through and flavors combine, about 3–4 minutes. If mixture seems dry, add 1–2 tablespoons water or chicken broth.

Remove from heat and stir in chopped cilantro and lime juice if using. Taste and adjust seasoning. Keep warm while you assemble flautas.

If using corn tortillas, warm them briefly on a dry skillet or in the microwave (covered with a damp paper towel) about 15–20 seconds each to make them pliable. For flour tortillas, 5–10 seconds per side on a hot skillet is sufficient.

Place about 2–3 tablespoons of the filling near one edge of each tortilla. Sprinkle a little shredded cheese on top of the filling if using. Tightly roll the tortilla around the filling and place seam-side down on a plate. Repeat with remaining tortillas and filling.

For a crisper, less-oily flauta, secure rolls with a toothpick through the center (remove after frying) or place seam-side down on a tray to chill 10 minutes so they hold shape.
Frying

Pour enough vegetable oil into a deep skillet or pot to reach about 1 to 1.5 inches deep and heat over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small piece of tortilla — it should sizzle and brown in about 30–45 seconds.

Working in batches to avoid crowding, carefully add 3–4 rolled flautas seam-side down to the hot oil. Fry, turning occasionally with tongs, until golden brown and crisp all over, about 2–3 minutes per batch.

Use tongs to remove flautas and transfer to a wire rack or paper towels to drain excess oil. If you used toothpicks, remove them now. Keep finished flautas in a warm oven (200°F / 95°C) while frying remaining batches.
Toppings & Serve

Arrange two flautas per plate. Top or serve alongside shredded lettuce, diced tomato, a dollop of sour cream, and optional guacamole or salsa.

Squeeze lime wedges over flautas just before eating. Serve immediately while crisp.
