Prepare aromatics
Heat a large skillet over medium heat. Add olive oil. When shimmering, add diced onion and sauté 4–5 minutes until softened and translucent. Add minced garlic and cook 30 seconds until fragrant.

Season and simmer
Stir in cumin, chili powder, smoked paprika, salt, and black pepper. Add tomato paste and mix to coat the meat evenly. Pour in the broth and bring to a simmer. Reduce heat to low and simmer 5–8 minutes until liquid reduces slightly and flavors concentrate. Stir in lime juice if using. Taste and adjust salt/pepper.
Red Sauce

While the filling simmers, combine crushed tomatoes, minced chipotle (or chipotle powder), agave nectar, apple cider vinegar, salt, and pepper in a small saucepan. Bring to a gentle simmer over medium-low heat and cook 6–8 minutes, stirring occasionally, until slightly thickened. Adjust sweetness or heat by adding more agave or chipotle as desired. Keep warm until assembly.

Warm tortillas
Heat a clean skillet or griddle over medium heat. Lightly coat with cooking spray or a teaspoon of oil. Warm each flour tortilla 20–30 seconds per side until pliable and slightly toasted. Keep tortillas covered with a clean towel to stay warm.

Assemble burritos
Lay a warm tortilla on a flat surface. Spoon about 1/2 cup of the meat or chicken filling down the center. Top with 2–3 tablespoons red sauce, 1/3 to 1/2 cup shredded cheese, a handful (about 1/2 cup) shredded lettuce, 2–3 tablespoons diced tomato, and 1–2 tablespoons sour cream. Sprinkle with chopped cilantro if using.

Fold burrito
Fold the two sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito. Place seam-side down on the skillet for 30–45 seconds to seal and melt the cheese slightly, turning once. Repeat with remaining tortillas.

Serve
Slice burritos in half if desired and serve immediately with additional red sauce and lime wedges on the side.
