    Activate Yeast

    In a small bowl, combine warm water (about 110°F/43°C), sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the flour and salt until well combined.

    Combine Mixtures

    Make a well in the center of the flour mixture and pour in the activated yeast mixture and olive oil. Mix until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Add more flour if the dough is too sticky.

    First Rise

    Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Flatbreads

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a thin circle, about 1/8 inch thick.

    Cook the Flatbreads

    Preheat a skillet or griddle over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until lightly browned and cooked through.

    Remove from the skillet and let cool slightly. Serve warm or store in an airtight container.
