Prepare the Fish
Rinse the Cornish fish fillets under cold water and pat dry with paper towels. Season both sides of the fillets with salt, black pepper, and crushed juniper berries.

Prepare the Parsnips
Peel the parsnips and cut them into small cubes. Boil them in salted water until tender, about 15 minutes.

Sauté the Wild Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté until they are golden brown, about 5-7 minutes. Season with salt, pepper, and fresh thyme.
