    Prepare the Pork

    Trim any excess fat from the pork tenderloin. Season with salt, black pepper, and half of the olive oil. Let it marinate for at least 15 minutes.

    Cook the Pork

    In a skillet, heat the remaining olive oil over medium heat. Add the pork tenderloin and sear on all sides until browned, about 8-10 minutes. Remove from skillet and let it rest.

    Prepare the Scallops

    In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Add the scallops and sear for 2-3 minutes on each side until golden brown.

    Combine with Preserved Plums

    Chop the preserved plums and add them to the skillet with the scallops. Add fresh thyme and lemon juice, stirring gently to combine. Cook for an additional 2 minutes.

    Serve

    Slice the rested pork tenderloin and arrange it on a plate. Top with the scallops and preserved plum mixture. Serve immediately.
