Method

Steak Preparation

  1. 1

    Season the Steak

Pat the ribeye steak dry with paper towels. Season both sides generously with salt and black pepper.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  3. 3

    Sear the Steak

Add the seasoned ribeye steak to the hot pan. Sear for about 4-5 minutes on one side to develop a nice crust.

  4. 4

    Add Aromatics

Flip the steak and add crushed garlic cloves and the sprig of rosemary or thyme to the pan. Cook for an additional 4-5 minutes for medium-rare or until your desired doneness.

  5. 5

    Rest the Steak

Remove the steak from the pan and let it rest for 5 minutes before slicing.

Fries Preparation

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

  2. 7

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 8

    Dry the Potatoes

After soaking, drain and pat the potatoes dry with a clean kitchen towel.

  4. 9

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 325°F (163°C).

  5. 10

    Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, frying for about 5-6 minutes or until golden brown and crispy.

  6. 11

    Season the Fries

Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and paprika to taste.
