Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Season the Pork

In a bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork tenderloin.

  3. 3

    Prepare the Vegetables

In a large bowl, combine the sliced carrots, cubed potatoes, and chopped onion. Drizzle with a little olive oil, season with salt and pepper, and toss to coat.

Cooking

  1. 4

    Sear the Pork

In a large skillet over medium-high heat, sear the pork tenderloin on all sides until browned, about 3-4 minutes per side.

  2. 5

    Arrange in Baking Dish

Transfer the seared pork to a baking dish and surround it with the prepared vegetables.

  3. 6

    Make the Sauce

In the same skillet, combine the chicken broth, red wine, and balsamic vinegar. Bring to a boil, scraping up any browned bits from the bottom of the pan.

  4. 7

    Bake

Pour the sauce over the pork and vegetables. Cover with foil and bake in the preheated oven for 25-30 minutes or until the pork reaches an internal temperature of 63°C (145°F).

  5. 8

    Rest and Serve

Remove the dish from the oven and let the pork rest for 5-10 minutes before slicing. Serve the pork with the roasted vegetables and some of the sauce drizzled over the top.
