Chicken Preparation

Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, and hot sauce. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour, ideally overnight.

Prepare the Breading
In a shallow dish, mix together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, pressing firmly to adhere.

Fry the Chicken
Carefully place the breaded chicken in the hot oil. Fry for about 7-8 minutes on each side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Remove and drain on paper towels.

Mix the Spicy Mayo
In a small bowl, combine mayonnaise, hot sauce, and lemon juice. Mix well until smooth and creamy. Adjust seasoning with more hot sauce if desired.

Toast the Buns
Lightly toast the burger buns in a skillet or toaster until golden brown.

Assemble the Sandwich
Spread a generous amount of spicy mayo on the bottom half of each bun. Add a piece of fried chicken, followed by lettuce and tomato slices. Top with the other half of the bun.
