Prepare filling

    Cook vegetables and ham

    Heat a 10-inch nonstick skillet over medium heat. Add the neutral oil and 1/2 tablespoon butter. When the butter melts and foams, add the diced onion and bell pepper. Sauté, stirring occasionally, until softened and beginning to brown, about 4–5 minutes. Add the diced ham and cook 1–2 minutes more until heated through and slightly caramelized. Transfer the cooked filling to a small bowl and wipe the skillet clean with a paper towel.

Make egg base

    Beat eggs

    In a medium bowl, crack the 3 large eggs. Add 1 tablespoon milk, 1/4 tsp kosher salt, and 1/8 tsp freshly ground black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 20–30 seconds). This introduces air for a lighter omelet.

Cook omelet

    Heat pan and add eggs

    Return the cleaned 10-inch nonstick skillet to medium-low heat. Add the remaining 1/2 tablespoon butter and allow it to melt and foam but not brown (about 30 seconds). Pour the beaten eggs into the skillet and let them sit untouched for about 10–15 seconds so the edges set.

    Stir and set

    Using a silicone or rubber spatula, gently pull the set edges toward the center while tilting the pan to let the uncooked egg flow to the edges. Repeat this motion around the pan for about 30–45 seconds until most of the egg is set but the top is still slightly glossy and moist.

    Add filling and cheese

    Scatter the cooked onion, pepper, and ham evenly over one half of the omelet. Sprinkle the 1/2 cup shredded cheddar cheese over the filling so it melts evenly.

    Fold omelet

    Use the spatula to carefully lift the opposite edge of the omelet and fold it over the filling, creating a half-moon. Press gently and cook 20–30 seconds more to finish melting the cheese and warm the interior. If you prefer a slightly firmer interior, cover the pan for 30–45 seconds.

    Slide and rest

    Carefully slide the omelet onto a warmed plate. Let it rest 30 seconds to settle and finish cooking from residual heat.
