Method

Cocktail

  1. 1

    Build and chill base

In a cocktail shaker, add the orange liqueur, fresh lemon juice, and simple syrup (if using). Add 4 ice cubes. Shake vigorously for 8–10 seconds until well chilled and slightly diluted.

  2. 2

    Strain and top

Double-strain the chilled mixture (to remove ice shards) into a chilled champagne flute or coupe, filling the glass about one-third to halfway. Top slowly with 4 oz (about 120 ml) of Andre Brut sparkling wine, pouring gently down the side of the glass so it retains bubbles.

  3. 3

    Balance and taste

Taste and, if desired, add up to 0.25 oz more simple syrup for sweetness or a few drops more lemon juice for brightness. Stir very gently once with a bar spoon to combine; avoid vigorous stirring to preserve effervescence.

Garnish

  1. 4

Express a lemon or orange twist over the glass to release the oils, then drop the twist into the cocktail or perch it on the rim.
