Seafood Cobb Salad

Prepare the Seafood

In a large pot of boiling salted water, cook the shrimp for 2-3 minutes until pink and opaque. Remove and let cool. In the same pot, drop in the lobster and cook for about 5-7 minutes until cooked through. Remove and let cool. Lastly, if using raw crab, steam it for about 10 minutes until fully cooked. If using pre-cooked crab meat, skip this step.

Chop the Ingredients

Once the seafood is cooled, chop the lobster and shrimp into bite-sized pieces. In a separate bowl, chop the hard-boiled eggs, tomato, cucumber, and avocado into small cubes.

Make the Focaccia Croutons

Preheat the oven to 375°F (190°C). Toss the cubed focaccia bread with olive oil, salt, and black pepper. Spread the cubes on a baking sheet and bake for 10-15 minutes until golden and crispy, turning halfway through.

Assemble the Salad

In a large salad bowl, combine the chopped lobster, shrimp, crab, eggs, tomato, cucumber, and avocado. Drizzle the basil-ranch dressing over the top and gently toss to combine.

Add the Croutons

Just before serving, sprinkle the focaccia croutons on top of the salad for added crunch.
