Prepare the Sirloin
Season the Lazy Acre Sirloin with salt and black pepper to taste. Heat a grill or skillet over medium-high heat, and sear the sirloin for about 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes before slicing.
Prepare the Toppings
Rinse the fresh cilantro under cold water, shake off excess moisture, and chop it coarsely. Cut the lime into wedges for serving.
Assemble the Tacos
On each warmed tortilla, layer sliced sirloin, crispy bacon, sautéed onions, fresh cilantro, a spoonful of spicy salsa roja, and a spoonful of salsa verde. Squeeze fresh lime juice over the top.
Serve
Serve the tacos immediately with extra lime wedges and salsa on the side.
