    Prepare the Sandwich

    Butter one side of each slice of sourdough bread. Place 4 oz of aged cheddar cheese between two slices of bread, buttered sides out.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwich on the skillet and grill until golden brown, about 3-4 minutes per side. Remove from heat and let cool slightly before slicing.

Tomato Soup

    Cook the Base

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes, vegetable broth, salt, and black pepper. Bring to a simmer and cook for 15-20 minutes.

    Blend the Soup

    Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

    Finish the Soup

    Stir in the heavy cream and fresh basil. Cook for an additional 5 minutes, then adjust seasoning to taste.
