Seafood Tower Preparation

1. Prepare the Seafood

Start by shucking the oysters and clams if they are not pre-shucked. Rinse them under cold water and place them on a platter with crushed ice.

2. Cook the Shrimp

Bring a pot of salted water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink. Remove from water and plunge into ice water to stop the cooking process. Drain and set aside.

3. Prepare the Lobster Cocktail

Boil the lobster tail in salted water for about 5-7 minutes. Let it cool, then remove the meat from the shell and cut it into bite-sized pieces. Arrange on the platter.

4. Make the Salmon Rillettes

In a mixing bowl, combine the cooked salmon (flaked), cream cheese, Dijon mustard, capers, lemon juice, and fresh dill. Mix until well combined and season with salt and black pepper to taste. Chill in the refrigerator for 30 minutes.

5. Assemble the Seafood Tower

Layer the oysters, clams, and shrimp on a large serving platter with the lobster cocktail in the center. Serve the salmon rillettes in a small bowl on the side.
