Pineapple syrup

Method

Pineapple syrup

    Combine finely chopped fresh pineapple, granulated sugar, and water in a small saucepan.

    Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar.

    Simmer for 8–10 minutes until the pineapple is very soft and the liquid is fragrant and slightly thickened.

    Remove from heat and let cool for 5 minutes, then stir in the fresh lime juice.

    Straining

    Strain the syrup through a fine-mesh sieve or cheesecloth into a clean container, pressing on solids to extract as much liquid as possible. Discard solids.

    Refrigerate the syrup until chilled. Makes about 1 cup; use 1 ounce per cocktail. Syrup will keep 5–7 days refrigerated.

Cocktail assembly

    Fill a tall tiki glass or highball with ice cubes until nearly full.

    Add 1 oz pineapple syrup, 1.5 oz vodka, and 1 oz Blue Curaçao to a cocktail shaker or mixing glass.

    Pour in 4 oz chilled lemonade. Gently stir (10–12 seconds) to combine and chill; shaking is optional but will create more dilution and froth.

    Strain the mixture into the prepared glass over the ice.

    Top with about 1 oz chilled club soda or lemon-lime soda for a light splash of fizz.

    Garnish & presentation

    Garnish with a fresh pineapple wedge and a maraschino cherry on a cocktail pick. Add a cocktail umbrella and, if desired, a small inflatable or decorative beach-ball stirrer for the tiki look.

    Serve immediately with a straw and enjoy.
