Pineapple Syrup (if making from scratch)
Method
Pineapple Syrup (optional, makes ~5 oz)
- 1
Cook syrup
Combine pineapple chunks, sugar, and water in a small saucepan over medium heat. Bring to a gentle simmer, stirring so the sugar dissolves. Simmer 6–8 minutes until pineapple is softened and liquid is slightly reduced.
- 2
Strain and cool
Remove from heat and strain the mixture through a fine mesh sieve into a bowl, pressing the solids to extract syrup. Discard solids. Cool to room temperature, then refrigerate until cold. Use 1 oz per cocktail and store leftover syrup in the refrigerator for up to 1 week.
