Cocktail

Method

Prepare Glass

  1. 1

Run the grapefruit wedge around the rim of a chilled highball or large coupe glass to moisten the edge.

  2. 2

Pour the coarse salt onto a small plate. Dip the moistened rim into the salt, rolling to coat evenly. Set the glass aside.

Mix Cocktail

  1. 3

    Combine

In a shaker, add the silver tequila, fresh grapefruit juice, fresh lime juice and organic agave nectar.

  2. 4

    Sweeten & Chill

Add a handful of ice (about 4–6 cubed ice pieces) to the shaker and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

  3. 5

    Strain

Fill the prepared glass with fresh ice (if using a highball) or leave lightly chilled (if using a coupe). Double-strain the tequila-grapefruit mixture into the glass to remove pulp and small ice chips.

  4. 6

    Top with Prosecco

Gently top the drink with chilled Prosecco (about 2 oz). Pour slowly over the back of a spoon or down the side of the glass to preserve bubbles and create a light foam.

  5. 7

    Adjust (optional)

If you prefer a lighter, slightly sweeter Paloma-mosa, add 1 oz grapefruit soda instead of 1 oz of the Prosecco or add it in addition to the Prosecco and stir gently once.

Finish & Serve

  1. 8

Garnish with a grapefruit twist or wheel on the rim, and optionally drop the wedge into the drink for extra aroma.

  2. 9

Serve immediately with a short stirring straw so the guest can combine layers if desired.
