Base & Fruit

Method

Base & Fruit

  1. 1

Prepare peach purée (if using fresh peaches)

If you are using fresh peaches, peel (blanch or use a paring knife), pit and chop 1 medium peach; place in a blender and puree until smooth. Strain through a fine mesh if you want a silkier texture. Measure 1/2 cup purée and chill briefly.

  2. 2

Combine orange juice, peach purée, granulated sugar, and lemon juice in a blender. Blend on medium for 20–30 seconds to dissolve the sugar and integrate the flavors.

  3. 3

Add ice cubes to the blender and pulse 6–10 times (or blend on high for 10–15 seconds) until the mixture is smooth and slightly frothy but still cold. Taste and adjust: add up to 1 tsp more sugar if you prefer it sweeter, or another 1/2 tsp lemon if it needs brightness.

  4. 4

Pour the blended Dreamsicle into a chilled tall glass, leaving about 1 inch (2.5 cm) of space at the top for whipped cream.

Whipped Cream & Finish

  1. 5

    Make fresh whipped cream

Place the heavy cream, powdered sugar, and vanilla extract in a small chilled bowl. Whisk vigorously by hand for 2–3 minutes or use a hand mixer on medium-high for 30–60 seconds, until soft peaks form. Do not overwhip; the cream should be light and billowy.

  2. 6

Spoon or pipe a generous dollop of whipped cream on top of the prepared Dreamsicle, creating a cloud-like cap.

  3. 7

Garnish with a light sprinkle of orange zest and a fresh peach slice on the rim or on top, if using. Serve immediately with a straw and long spoon.
