Sparkling Wine

Chill bottle
Place the 750 ml bottle of sparkling wine in an ice bucket filled with ice and about 1 cup (240 ml) cold water for 15–20 minutes, or refrigerate upright for at least 2 hours prior to service. Keep bottle chilled until ready to pour.

When ready to serve, open the bottle carefully: remove foil, loosen and remove wire cage, hold cork gently and twist bottle (not cork), and ease cork out slowly to prevent overflowing.
Juice Carafe (small)

Prepare juice carafe
If using fresh-squeezed orange juice, strain pulp through a fine mesh sieve for a smooth carafe. For other juices (cranberry, pineapple), stir gently to combine. Fill a small carafe (approximately 1 quart/950 ml) with the chosen juice and chill until service. Keep extra carafes refrigerated.

Label each carafe clearly if offering multiple juice types so guests can choose. For the standard Bottle Service Mimosas offering, include one small carafe of orange juice with the bottle of sparkling wine.

Glassware and garnish prep
Have 6 chilled champagne flutes or stemless glasses ready. If sugaring the rim: rub a fresh orange slice around the rim of each glass, then dip the rim into a shallow dish of sugar to coat lightly. Place a slice of orange on the rim or in the glass for garnish.

Pouring mimosas
To make mimosas tableside, pour sparkling wine into each glass one-third to one-half full (about 2–3 oz / 60–90 ml), then top with chilled orange juice from the small carafe to fill (about 2–3 oz / 60–90 ml), adjusting to taste. Pour juice gently down the side of the glass to preserve bubbles. Serve immediately with a straw if desired.

Extra juice carafes
If guests request additional juice carafes, present the extra chilled carafe(s) and replenish glasses as needed. Each extra small carafe (approx. 1 quart) will make about 4–6 additional mimosas depending on pour size.

Keep unused sparkling wine covered and chilled between pours. If you expect slower service, partially chill wine bottle in ice bucket between refills to keep it crisp.
Cleanup & Storage

After service, reseal leftover sparkling wine (use original cork or a sparkling stopper) and refrigerate upright for up to 2–3 days. Discard opened fresh juice after 3 days. Clean carafes and glassware with warm soapy water.
