Cocktail

  1. 1

    Prepare glass

Fill a large wine glass about three-quarters full with ice cubes so the glass is well chilled and there is room for ingredients and garnish.

  2. 2

    Pour Aperol

Measure and pour 3 oz Aperol over the ice. Pour gently against the ice to keep it from splashing too much.

  3. 3

    Add Prosecco

Measure and slowly add 3 oz chilled Prosecco. Pour slowly to preserve bubbles and to layer liquids evenly.

  4. 4

    Top with soda

Add a splash (about 1 oz) of chilled soda water to lighten the drink. Adjust quantity to taste—less for stronger, more for lighter and bubblier.

  5. 5

    Garnish and serve

Gently stir once with a bar spoon to combine (lift and stir through the center 1–2 times). Garnish with one orange wheel placed on the rim or floated in the glass. Serve immediately with a short straw if desired.
