1. Prepare the Lavender Blueberry Syrup
In a small saucepan, combine the fresh blueberries, dried lavender buds, honey (or agave syrup), and 1/2 cup of water. Bring to a simmer over medium heat, stirring occasionally until the blueberries burst and the mixture thickens slightly, about 5-7 minutes. Remove from heat and allow to cool.
2. Strain the Syrup
Once cooled, strain the syrup through a fine-mesh sieve into a bowl or measuring cup, pressing the blueberries to extract as much liquid as possible. Discard the solids.
3. Combine with Lemon Juice
In a large glass or pitcher, mix the strained syrup with fresh lemon juice.
4. Assemble the Seltzer
Fill a glass with ice cubes, pour the blueberry lavender mixture over the ice, and top with sparkling water. Stir gently to combine.
5. Garnish and Serve
Garnish with extra blueberries and a sprig of lavender if desired. Serve immediately and enjoy!
