Wine Making Process

1

Harvesting Grapes

Harvest the Sauvignon Blanc grapes from the vineyard when they reach optimal ripeness. This is typically done in the early morning to keep the grapes cool.

2

Crushing and Pressing

Crush the harvested grapes to release the juice. Press the crushed grapes to separate the juice from the skins, seeds, and stems.

3

Fermentation

Transfer the juice to fermentation tanks. Add the wine yeast to start the fermentation process. Maintain a temperature between 12-18°C (53-64°F) for optimal fermentation.

4

Racking

After fermentation is complete, siphon the wine off the sediment (lees) into another container. This process is known as racking.

5

Aging

Allow the wine to age for several months in stainless steel or oak barrels, depending on the desired flavor profile. Monitor the taste regularly.

6

Bottling

Once the aging process is complete, bottle the wine using sanitized equipment. Add sulfur dioxide to stabilize the wine and prevent oxidation.

7

Labeling and Storing

Label the bottles appropriately and store them in a cool, dark place until ready to serve.
