    Prepare the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and chopped white chocolate. Heat over medium heat, stirring frequently until the chocolate is melted and the mixture is smooth. Remove from heat and allow to cool slightly.

    Whisk Egg Yolks

    In a large mixing bowl, whisk together the egg yolks and granulated sugar until pale and slightly thickened, about 2-3 minutes.

    Combine Mixtures

    Gradually pour the warm cream mixture into the egg yolk mixture while continuously whisking. This will temper the eggs and prevent them from scrambling. Once fully combined, stir in the vanilla extract.

Baking

    Prepare Ramekins

    Preheat your oven to 325°F (160°C). Place six ramekins in a large baking dish. Divide the white chocolate mixture evenly among the ramekins.

    Bake in Water Bath

    Carefully pour hot water into the baking dish around the ramekins, ensuring the water reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

    Cool and Refrigerate

    Remove the ramekins from the water bath and allow them to cool at room temperature for about 30 minutes. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours or overnight.

    Prepare the Blueberries

    In a small bowl, gently toss the fresh blueberries with a little bit of sugar to coat them lightly.

    Brulee the Top

    Once set, remove the ramekins from the refrigerator. Evenly sprinkle the granulated sugar for brulee over the top of each dessert. Using a kitchen torch, carefully melt the sugar until golden and caramelized. If you do not have a kitchen torch, you can place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.
