To Prepare the Blueberry Layer

Cook the Blueberries
In a medium saucepan, combine the fresh blueberries, 1 tablespoon of granulated sugar, and lemon juice. Cook over medium heat, stirring gently, until the blueberries are soft and start to release their juices, about 5-7 minutes. Remove from heat and let cool slightly.
To Prepare the White Chocolate Custard

Heat the Cream and Milk
In a saucepan, heat the heavy cream and whole milk over medium heat until just simmering. Remove from heat.

Whisk the Egg Yolks
In a mixing bowl, whisk together the egg yolks, 1 tablespoon of granulated sugar, and vanilla extract until smooth and slightly thickened.

Combine and Add Chocolate
Gradually pour the hot cream mixture into the egg yolk mixture while whisking continuously to temper the eggs. Once combined, add the chopped white chocolate and stir until melted and smooth.
To Assemble and Brulee

Layer the Blueberries
In four ramekins, divide the cooked blueberry mixture evenly among them.

Add the Custard
Pour the white chocolate custard over the blueberries in each ramekin, filling them almost to the top.

Chill the Ramekins
Place the filled ramekins in the refrigerator to chill for at least 2 hours, or until the custard is set.

Brulee the Top
Once set, sprinkle 1/2 tablespoon of granulated sugar on top of each custard layer. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden crust. If you don't have a torch, place the ramekins under a broiler for 1-2 minutes, keeping a close eye to prevent burning.
