Toppings

Method

Preparation of Burger Patties

  1. 1

    Prepare the Black Beans

Drain and rinse the black beans. Place them in a large mixing bowl and mash them with a fork or potato masher until mostly smooth but still a bit chunky.

  2. 2

    Mix Ingredients

Add the roasted corn, smoky chipotle peppers, breadcrumbs, garlic powder, onion powder, cumin, salt, and black pepper to the mashed black beans. Mix thoroughly until all ingredients are well combined.

  3. 3

    Form Patties

Divide the mixture into two equal portions and shape each portion into a patty, about 1-inch thick.

  4. 4

    Chill the Patties

Place the patties on a plate and refrigerate for at least 30 minutes to help them firm up.

Cooking the Patties

  1. 5

    Heat the Oil

In a large skillet, heat the olive oil over medium heat.

  2. 6

    Cook the Patties

Once the oil is hot, carefully add the patties to the skillet. Cook for about 5-6 minutes on each side, or until they are golden brown and heated through.

Assembling the Burger

  1. 7

    Prepare the Toppings

Slice the avocado, tomato, and red onion. Set aside.

  2. 8

    Assemble the Burger

On each whole wheat burger bun, place a lettuce leaf, followed by the black bean patty, slices of avocado, tomato, and red onion. Top with the other half of the bun.
