Preparation of Chicken

Marinate the Chicken
In a bowl, mix olive oil, salt, black pepper, and garlic powder. Coat the chicken breasts in this marinade and let them sit for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat while the chicken is marinating.
Grilling Chicken

Grill the Chicken
Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
Assembling the Dish

Add Brisket
Once the chicken is grilled, layer the sliced brisket evenly over the top of each chicken breast.

Add BBQ Sauce
Generously pour BBQ sauce over the brisket on each chicken breast.

Add Cheese and Tomatoes
Sprinkle the shredded cheddar cheese over the BBQ sauce, followed by a generous amount of diced tomatoes.

Remove the chicken from the grill and serve immediately while hot.
