French Onion Soup

    Prepare the Onions

    Slice the yellow onions thinly and set aside.

    Sauté the Onions

    In a large pot, melt the unsalted butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until they are caramelized and golden brown.

    Deglaze the Pot

    Pour in the dry white wine and scrape the bottom of the pot to deglaze. Allow it to simmer for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, bay leaves, fresh thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Baguette and Cheese

    While the soup simmers, preheat the oven to 350°F (175°C). Slice the baguette into thick slices and toast them in the oven until golden brown. Grate the Gruyère cheese.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into bowls, top with a slice of toasted baguette, and sprinkle with Gruyère cheese. Place under the broiler until the cheese is bubbly and golden.

Chili

    Prepare the Ingredients

    Chop the onion and garlic finely. Set aside.

    Cook the Beef

    In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon.

    Sauté Onion and Garlic

    Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.

    Add Tomatoes and Beans

    Stir in the canned diced tomatoes and kidney beans. Mix well.

    Season the Chili

    Add chili powder, ground cumin, salt, and black pepper. Stir to combine.

    Simmer

    Reduce the heat to low and let the chili simmer uncovered for at least 30 minutes, stirring occasionally.

    Serve the Chili

    Taste and adjust seasoning if necessary. Serve hot, garnished with your choice of toppings.
