Method

Prepare the Wings

  1. 1

    Clean the Wings

Rinse the chicken wings under cold water and pat them dry with paper towels.

  2. 2

    Apply Dry Rub

In a bowl, mix together all the dry rub ingredients. Generously coat the wings with the dry rub, ensuring they are evenly covered. Let them sit for 30 minutes to absorb the flavors.

Prepare the Smoker

  1. 3

    Soak Hickory Chips

Soak the hickory wood chips in water for at least 30 minutes before smoking to prevent them from burning too quickly.

  2. 4

    Preheat Smoker

Preheat your smoker to 225°F (107°C). Add the soaked hickory wood chips to the smoker according to the manufacturer's instructions.

Smoke the Wings

  1. 5

    Place Wings in Smoker

Once the smoker is preheated, place the seasoned wings on the smoker racks, making sure they are not touching each other.

  2. 6

    Smoke the Wings

Smoke the wings for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the wings are crispy.

Prepare the Ranch Dressing

  1. 7

    Mix Ranch Ingredients

In a mixing bowl, combine mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, and salt. Whisk until smooth and well combined.

  2. 8

    Chill the Dressing

Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve

  1. 9

    Plate the Wings

Once the wings are done smoking, remove them from the smoker and let them rest for a few minutes.

  2. 10

    Serve with Ranch

Serve the smoked wings with the chilled ranch dressing on the side for dipping.
