Chicken Tenders

Method

Chicken Tenders

  1. 1

    Prepare the Chicken

Cut the chicken breast into strips of about 1 inch wide.

  2. 2

    Coat the Chicken

In three separate bowls, place the flour, beaten egg, and bread crumbs. Season the flour with salt, black pepper, and garlic powder. Dip each chicken strip first in the flour, then in the egg, and finally coat it with the bread crumbs.

  3. 3

    Fry the Chicken

Heat the oil in a large skillet over medium heat. Once hot, add the coated chicken strips in batches and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Salad Assembly

  1. 4

    Prepare the Vegetables

While the chicken is frying, chop the red and green bell peppers, shred the carrots, slice the cherry tomatoes in half, and thinly slice the red onion.

  2. 5

    Assemble the Salad

In a large bowl, combine the shredded cheddar and jack cheeses, diced bell peppers, shredded carrots, halved cherry tomatoes, and sliced red onion.

  3. 6

    Add Chicken

Once the chicken tenders are cooked and slightly cooled, cut them into smaller pieces and add them to the salad mixture.

Serving

  1. 7

    Serve

Toss the salad gently to combine. Serve with your choice of dressing on the side.
