    Sauté the Base Ingredients

    In a large pot, melt the butter over medium heat. Add the diced onion and celery, and sauté until the onion becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add Potatoes and Stock

    Add the cubed potatoes to the pot, followed by the fish stock or clam juice. Bring the mixture to a boil, then reduce heat to a simmer. Add the salt, black pepper, thyme, and bay leaf. Simmer for about 15 minutes, or until the potatoes are tender.

Cooking Seafood

    Incorporate Seafood

    Once the potatoes are tender, stir in the shrimp, scallops, white fish, and clams. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.

    Add Cream

    Stir in the heavy cream and let the chowder simmer gently for another 5 minutes. Adjust seasoning if necessary.

Serving

    Garnish and Serve

    Remove the bay leaf from the chowder. Ladle the chowder into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
