Method

Preparing the Portabella Fries

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 2

    Prepare the Mushrooms

Clean the Portabella mushrooms with a damp cloth and remove the stems. Slice each mushroom into fry-shaped strips, about 1/2 inch thick.

  3. 3

    Set Up the Breading Station

In one bowl, place the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs mixed with the grated Parmesan cheese.

  4. 4

    Bread the Fries

Dip each mushroom strip first into the flour mixture, ensuring it is fully coated. Then dip it into the beaten eggs, and finally coat it with the panko and Parmesan breadcrumb mixture. Place the breaded mushrooms on the prepared baking sheet.

  5. 5

    Drizzle with Olive Oil

Lightly drizzle the breaded Portabella fries with olive oil to help them crisp up while baking.

  6. 6

    Bake the Fries

Bake in the preheated oven for 20-25 minutes, or until the fries are golden brown and crispy, turning them halfway through cooking.

Making the Dipping Sauce

  1. 7

    Combine Ingredients

In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lemon juice. Mix until well blended.

  2. 8

    Serve

Serve the crispy Portabella fries hot with the dipping sauce on the side.
