Method

Preparing the Portabella Fries

    Prepare the Mushrooms

    Clean the Portabella mushrooms with a damp cloth to remove any dirt. Remove the stems and slice the mushrooms into fry-shaped strips, about 1/2-inch thick.

    Make the Battering Mixture

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In a separate bowl, whisk together the eggs and milk until well combined.

    Heat the Oil

    In a deep frying pan or a heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Mushrooms

    Dip each mushroom strip into the egg mixture, allowing excess to drip off, then coat it in the flour mixture, pressing gently to ensure the batter adheres.

    Fry the Mushrooms

    Carefully lower the battered mushroom strips into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown and crispy, then remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

    Combine Ingredients

    In a medium bowl, combine the mayonnaise, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper.

    Whisk the ingredients together until smooth and well combined. Taste and adjust seasoning if necessary.

    Chill the Dressing

    Cover the ranch dressing and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
