Prepare the Pork Steak
Remove the pork steak from the refrigerator and let it sit at room temperature for about 30 minutes.

Make the Dry Rub
In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.

Apply the Dry Rub
Evenly coat the pork steak with the dry rub mixture. Ensure all sides are covered. Let it rest for another 15 minutes to absorb the flavors.
Smoking

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before using to prevent them from igniting too quickly.

Preheat the Smoker
Preheat your smoker to a temperature of 225°F (107°C).

Smoke the Pork Steak
Once the smoker is ready, place the pork steak on the grill grate. Add the soaked hickory wood chips to the smoker box or directly onto the coals.

Smoke the pork steak for about 1.5 to 2 hours, or until it reaches an internal temperature of 145°F (63°C).
