Slice the Meat
If using steak or chicken breast, cut the meat into thin strips. If using smoked brisket, slice it into thin pieces.

Prepare the Vegetables
Thinly slice the red onion and set aside. Drain the pepperoncini if they are pickled.
Cooking

Sauté the Meat
In a large skillet, heat the olive oil over medium-high heat. Add the steak, chicken, or brisket and season with salt and black pepper. Cook for about 5-7 minutes until the meat is browned and cooked through.

Melt the Cheese
Sprinkle the Provel cheese over the meat and vegetable mixture in the skillet. Cover with a lid and let it melt for about 2-3 minutes.

Prepare the Hoagie Rolls
While the cheese is melting, slice the hoagie rolls open. You can lightly toast them in the oven if desired.

Build the Sandwich
Once the cheese has melted, spoon the meat and vegetable mixture into each hoagie roll. Serve immediately.
