    Prepare the Ingredients

    Gather all ingredients: rye bread, sliced pastrami, sauerkraut, Swiss cheese, and Thousand Island dressing. If you prefer a richer flavor, have butter ready for toasting.

Assembling the Sandwich

    Spread Dressing

    Take two slices of rye bread and spread 1 tablespoon of Thousand Island dressing on one side of each slice.

    Layer the Ingredients

    On the dressing side of one slice, layer the sliced pastrami, followed by the sauerkraut, and then top it with a slice of Swiss cheese. Place the other slice of rye bread on top, dressing side down.

Cooking

    Grill the Sandwich

    Heat a skillet over medium heat. If using butter, melt 1 tablespoon in the skillet. Place the sandwich in the skillet and grill for about 3-4 minutes until the bread is golden brown and the cheese begins to melt.

    Flip and Grill the Other Side

    Carefully flip the sandwich using a spatula. Add the remaining tablespoon of butter to the skillet if desired. Grill the other side for another 3-4 minutes until golden brown and the cheese is fully melted.

Serving

    Slice and Serve

    Remove the sandwich from the skillet, let it cool for a minute, then slice it in half diagonally. Serve warm with extra Thousand Island dressing on the side if desired.
