Preparation of Chicken Tenders

    Prepare the Chicken

    Preheat your frying oil in a deep pan or fryer to 350°F (175°C).

    Set Up Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Chicken

    Dip each chicken tender in flour, then into the egg mixture, and finally coat with breadcrumbs.

    Fry the Chicken

    Carefully place the breaded chicken tenders into the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Assembling the Salad

    Prepare the Vegetables

    While the chicken is frying, prepare the vegetables. Dice the red and green bell peppers, grate the carrots, dice the tomatoes, and thinly slice the red onion.

    Assemble the Salad

    In a large bowl, combine the mixed greens, bell peppers, grated carrots, diced tomatoes, and sliced red onion.

    Add the Chicken and Cheeses

    Once the chicken tenders are cooked and slightly cooled, slice them into strips and add them to the salad. Sprinkle the shredded cheddar and jack cheeses on top.

    Serve with Dressing

    Serve the salad with two sides of your favorite dressing on the side.
