Prepare the Chicken
Season both sides of the chicken breasts with blackening seasoning. Make sure to coat them evenly.

Cook the Chicken
Heat a skillet over medium-high heat. Add a little oil to the skillet and place the seasoned chicken breasts in the skillet. Cook for about 5-6 minutes on each side until the chicken is blackened and cooked through. Remove from the skillet and let rest for 5 minutes.

Prepare the Tomatoes
Wash the tomatoes and chop them into bite-sized pieces.
Assemble the Salad

Combine Ingredients
In a large bowl, slice the cooked chicken into strips. Add the chopped tomatoes, sliced hard-boiled eggs, cheddar cheese, jack cheese, and croutons.

Add Dressing
Drizzle your choice of dressing over the salad. Start with a small amount, and add more to taste.

Toss all the ingredients together until well combined. Serve immediately for the best flavor.
