    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

    Fold in the chocolate chips until evenly distributed throughout the dough.

    Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, leaving space between each for spreading.

    Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Let cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Assembly

    Scoop Ice Cream

    Once the cookies are completely cooled, scoop about 1/4 cup of ice cream onto the flat side of one cookie.

    Place another cookie, flat side down, on top of the ice cream and gently press down to create a sandwich.

    Repeat the process with the remaining cookies and ice cream to create additional ice cream sandwiches.

    Freeze

    Place the assembled ice cream sandwiches in the freezer for at least 30 minutes to firm up before serving.
