Prepare the Ribs
Remove the membrane from the back of the ribs and trim any excess fat. Pat the ribs dry with paper towels.

Make the Dry Rub
In a bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well until all ingredients are fully combined.

Apply the Rub
Generously apply the dry rub to both sides of the ribs, ensuring they are well coated. Let the ribs sit at room temperature for about 30 minutes to absorb the flavors.
Smoking

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes before using. Preheat your smoker to 225°F (107°C).

Once the smoker is preheated, add the soaked wood chips to the smoker box.

Place the ribs bone-side down on the smoker rack. Close the lid and smoke the ribs for about 3 to 4 hours, or until the meat is tender and pulls away from the bone easily.
