Method

Preparation

  1. 1

    Clean the Mushrooms

Gently wipe the portabella caps with a damp cloth to remove any dirt. Remove the stems and gills from the mushrooms.

  2. 2

    Marinate the Mushrooms

In a bowl, mix olive oil, garlic powder, salt, and black pepper. Brush the mixture over the portabella caps and let them marinate for at least 20 minutes.

  3. 3

    Prepare the Toppings

Chop the roasted red peppers into strips and crumble the feta cheese into a bowl.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 5

    Grill the Portabella Caps

Place the marinated portabella caps on the grill, gill side down, and grill for about 5-7 minutes. Flip them over and grill for an additional 5-7 minutes until tender.

  3. 6

    Add Toppings

Once the portabella caps are grilled, remove them from the grill and place them on a serving plate. Top each cap with roasted red peppers and crumbled feta cheese.

  4. 7

    Drizzle with Balsamic Vinaigrette

Drizzle the balsamic vinaigrette over the topped portabella caps before serving.
