Prepare the Salmon

    Marinate the Salmon

    In a bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes in the refrigerator.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.

Cook the Rice

    Rinse the Rice

    Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, 2 cups of water, and 0.25 tsp of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is fluffy and all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

Grill the Salmon

    Grill the Salmon

    Remove the salmon from the marinade and place it on the preheated grill. Grill for about 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F.

Assemble the Dish

    Serve

    Fluff the cooked rice with a fork and place it on plates. Top with the grilled salmon fillets. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
