Preparation Instructions

  1. 1

    Prepare the Chicken

If not pre-marinated, marinate the chicken strips in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.

  2. 2

    Cook the Chicken

Grill or sauté the marinated chicken strips over medium heat for about 5-7 minutes on each side until cooked through and golden brown. Remove from heat and let cool slightly.

  3. 3

    Prepare the Vegetables

While the chicken is cooking, rinse and chop the mixed greens, cucumber, green bell pepper, red onion, and grape tomatoes. Slice the cucumbers into half-moons, the bell pepper into strips, and the red onion into thin rings.

  4. 4

    Assemble the Salad

In a large salad bowl, combine the mixed greens, chopped cucumber, green bell pepper, red onion, grape tomatoes, Kalamata olives, and feta cheese.

  5. 5

    Add Chicken

Once the chicken has cooled slightly, slice it into strips and add it to the salad mixture.

  6. 6

    Dress the Salad

Drizzle the olive dressing over the salad and toss gently to combine all the ingredients evenly.

  7. 7

    Serve

Serve the Greek salad immediately, garnished with extra feta cheese and olives if desired.
