Preparation of Dry Rub

    Mix the Dry Rub Ingredients

    In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, cayenne pepper, and dried oregano. Mix until well combined.

Preparing the Ribs

    Prepare the Ribs

    Remove the membrane from the back of the ribs if it is still attached. Pat the ribs dry with paper towels.

    Apply the Dry Rub

    Generously apply the dry rub mixture all over the ribs, ensuring they are well coated. Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Smoking Process

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes before using. Preheat your smoker to a temperature of 225°F (107°C).

    Smoke the Ribs

    Place the ribs in the smoker bone side down. Add the soaked hickory wood chips to the smoker. Smoke the ribs for 5 hours, maintaining a steady temperature.

    Mop with Apple Cider Vinegar

    Every hour, use a mop or brush to apply apple cider vinegar to the ribs to keep them moist.

BBQ Sauce (Optional)

    Prepare the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Heat over medium heat until simmering, then reduce heat and let it cook for 15 minutes.

    Glaze the Ribs (Optional)

    In the last 30 minutes of smoking, brush the prepared BBQ sauce over the ribs if desired.

Serving

    Slice and Serve

    Once the ribs have reached an internal temperature of 190°F (88°C) and are tender, remove them from the smoker. Let them rest for 10 minutes before slicing. Serve dry or with BBQ sauce on the side.
