Prepare Catfish

    Season the Catfish

    Rinse the catfish fillets under cold water and pat dry with paper towels. Season them with salt and black pepper on both sides.

    Prepare the Breading

    In a shallow dish, combine the all-purpose flour, cornmeal, paprika, salt, and black pepper. In another dish, whisk together the eggs and buttermilk.

    Bread the Catfish

    Dip each catfish fillet first into the egg mixture, allowing excess to drip off, then dredge in the flour-cornmeal mixture until fully coated. Set aside on a plate.

Fry the Catfish

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Catfish

    Carefully place the breaded catfish fillets in the hot oil, frying in batches if necessary. Fry for 3-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Hoagies

    Prepare the Hoagie Rolls

    Slice the hoagie rolls lengthwise, without cutting all the way through. Lightly toast them if desired.

    Add Fillings

    Place a layer of lettuce on the bottom of each hoagie roll, followed by a fried catfish fillet. Top with slices of tomato and onion.

    Finish with Tartar Sauce

    Generously spread tartar sauce on the inside of the top half of the hoagie roll before closing the sandwich.
