Preparing the Fish

Season the Fish
Sprinkle the fish fillets with 1 tsp of salt and let them sit for about 15 minutes to absorb the flavor.

Make the Batter
In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 2 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Mix well. Gradually add 1 cup of cold sparkling water (and beer if using) while whisking until the batter is smooth and has no lumps.
Preparing the Chips

Heat the Oil
Increase the oil temperature to 350°F (175°C).

Fry the Fish
Dip each seasoned fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Fry the Chips Again
Fry the pre-cooked chips in the hot oil for another 3-4 minutes or until they are golden brown and crispy. Drain on paper towels and sprinkle with salt.
Serving

Plate the Fish and Chips
Serve the crispy fish alongside the golden chips. Optionally, serve with tartar sauce and lemon wedges.
