For the Topping
Method
Prepare the French Onion Soup
- 1
Caramelize the Onions
In a large pot, melt the unsalted butter and olive oil over medium heat. Add the sliced yellow onions and cook, stirring frequently, for about 30-40 minutes, or until the onions are caramelized and golden brown.
- 2
- 3
Deglaze with Wine
Pour in the dry white wine, scraping the bottom of the pot to deglaze and incorporate any browned bits. Let it simmer for about 5 minutes.
- 4
Add Broth and Seasonings
Stir in the beef broth, fresh thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
- 5
Remove Bay Leaf
After simmering, remove the bay leaf from the pot and taste the soup for seasoning, adjusting salt and pepper as needed.
Prepare the Topping
- 6
Toast the Baguette
While the soup is simmering, preheat the oven to 350°F (175°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes or until golden brown.
- 7
Prepare the Cheese Topping
Once toasted, remove the baguette slices from the oven. Top each slice with a generous amount of Gruyère cheese and a sprinkle of Parmesan cheese.
Serve the Soup
- 8
- 9
Broil the Cheese
Place the cups under the broiler for 2-3 minutes or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.
- 10
Garnish and Serve
Remove from the oven, garnish with chopped fresh parsley, and serve immediately.
