Preparation of Vegetables

Chop the Cabbage
Remove the outer leaves of the green and red cabbage. Cut them in half, remove the core, and finely slice the cabbage into thin strips. You should have about 4 cups of green cabbage and 1 cup of red cabbage.

Grate the Carrots
Peel the carrots and then grate them using a box grater or a food processor until you have approximately 1 cup of grated carrots.

Trim the ends of the green onions and chop them into small pieces, using both the white and green parts.

In a medium mixing bowl, add 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of celery seed.
