Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to prepare for baking the cakes.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour to prevent sticking.

Making the Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine 170g of semisweet chocolate and 115g of unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Mix in Sugar

Stir in 100g of powdered sugar into the melted chocolate mixture until well combined.

  3. 5

    Add Eggs and Vanilla

Add 2 large eggs, 1 egg yolk, and 1 tsp of vanilla extract to the mixture. Whisk until smooth.

  4. 6

    Incorporate Dry Ingredients

Sift in 50g of all-purpose flour and a pinch of salt. Gently fold until just combined; do not overmix.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 9

    Serve Immediately

Remove the cakes from the oven and let them sit for 1 minute. Carefully invert each ramekin onto a plate and gently tap to release. Serve warm with a scoop of vanilla ice cream and a dusting of powdered sugar if desired.
