Method

Preparation

  1. 1

    Cook the Penne Pasta

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Chicken

Season the chicken breasts with salt and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C). Remove from the grill and let rest before slicing.

Cooking the Vegetables

  1. 3

    Sauté the Vegetables

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant. Add the broccoli florets and sliced mushrooms to the skillet and cook for about 4-5 minutes until they start to soften. Add the cherry tomatoes and cook for an additional 2-3 minutes.

Making the Alfredo Sauce

  1. 4

    Prepare the Alfredo Sauce

Pour the heavy cream into the skillet with the sautéed vegetables and bring to a gentle simmer. Stir in the grated Parmesan cheese and mix until the cheese is melted and the sauce is creamy. Season with salt and black pepper to taste.

Combining Everything

  1. 5

    Combine Pasta, Chicken, and Sauce

Add the cooked penne pasta and sliced grilled chicken to the skillet with the Alfredo sauce. Toss everything together until the pasta and chicken are well coated in the sauce. Heat through for a couple of minutes, if necessary.

  2. 6

    Serve

Serve hot, garnished with extra Parmesan cheese if desired.
